- In a large mixing bowl, combine whole wheat flour, besan, methi leaves, turmeric, chilli powder, cumin powder, sesame seeds, ajwain, and salt.
- Add curd and oil. Mix well.
- Gradually add warm water and knead into a soft, smooth dough.
- Cover and let the dough rest for 10 minutes.
- Divide the dough into 8 equal portions. Roll each into a thin circle using dry flour.
- Heat a tawa over medium heat. Cook each thepla until brown spots appear on both sides. Apply a few drops of oil if desired.
- Serve hot with yogurt, pickle, chutney, or tea.
