For Thepla Dough

  • 1 cup whole wheat flour
  • 1 cup fresh methi leaves finely chopped
  • 1 tbsp besan gram flour
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • ½ tsp cumin powder roasted
  • ½ tsp sesame seeds
  • ¼ tsp ajwain carom seeds
  • 1 tbsp fresh curd optional
  • 1 tsp oil
  • Salt to taste
  • Warm water as needed

  • 1 tbsp flaxseed powder
  • 1 tbsp grated carrot
  • 1 tbsp coriander leaves finely chopped

  • In a large mixing bowl, combine whole wheat flour, besan, methi leaves, turmeric, chilli powder, cumin powder, sesame seeds, ajwain, and salt.
  • Add curd and oil. Mix well.
  • Gradually add warm water and knead into a soft, smooth dough.
  • Cover and let the dough rest for 10 minutes.
  • Divide the dough into 8 equal portions. Roll each into a thin circle using dry flour.
  • Heat a tawa over medium heat. Cook each thepla until brown spots appear on both sides. Apply a few drops of oil if desired.
  • Serve hot with yogurt, pickle, chutney, or tea.
