In a large mixing bowl, combine whole wheat flour, jowar flour, bajra flour, ragi flour, besan, oats powder, psyllium husk, cumin seeds, and salt.
Gradually add warm water and knead into a soft, smooth dough.
Cover and let the dough rest for 10 minutes. This improves texture and makes rolling easier.
Divide the dough into 6 equal portions. Roll each portion into a thin round roti using dry flour if needed.
Heat a tawa over medium-high heat. Cook each roti until small bubbles appear. Flip and cook until brown spots develop on both sides.
Brush lightly with ghee if desired and serve hot with dal, sabzi, yogurt, or chutney.
