STEP-BY-STEP
Heat ghee in a pan.
Add makhana and roast for 6–8 minutes until crisp.
Add turmeric, chilli powder, pepper, and black salt.
Mix until all makhana is evenly coated.
Switch off heat and sprinkle chaat masala.
Cool completely and store in an airtight jar.
NOTES
Add curry leaves for aroma.
Use peri-peri or garlic powder for variations.
