  • 4 medium tomatoes roughly chopped
  • 1 small onion chopped
  • 3 –4 basil leaves
  • 1 garlic clove
  • 1 tsp olive oil
  • 1 tsp pepper
  • Salt to taste
  • 2 cups water

  • Heat olive oil and sauté onions and garlic.
  • Add tomatoes and cook 5 minutes.
  • Add basil and water.
  • Cook for 10 minutes.
  • Blend the soup until smooth.
  • Bring back to pot, add salt and pepper, simmer for 2 minutes.
